2 tbsp. extra-virgin olive oil
1 medium yellow onion,coarsely chopped
1 large red bell pepper,coarsely chopped
1 c. white mushrooms, halved
1 can (28 ounces) whole peeled tomatoes, with juice
1 can (12 ounces) tomato paste
1/2 c. regular chicken stock
1/2 c. red cooking wine
3 cloves garlic, minced
1 bay leaf
2 tbsp. minced fresh oregano
2 tbsp. minced fresh parsley
1 tbsp. minced fresh basil
1 tsp. salt
1/2 tsp. ground black pepper
20 grams glucomannan

- In a large nonstick saucepan over medium-high heat, brown the chicken in 2 tablespoons of the oil. Do not cook through.
- In a large slow cooker, combine the remaining ingredients.
- Add the chicken to the slow cooker.
- Cook on high heat for 4 hours or on low heat for 8 hours.
- Immediately before eating, add 2 grams of the glucomannan to each serving. (If your glucomannan is in capsule form, break open the capsules and add only the powder to the dish.)
